Creamy Butternut Squash Soup

1 medium Butternut squash peeled, cut, scraped

3 TBSP chopped onion-I used red

1 chopped stalk of celery

Sautee all in 2 TBSP Ghee for 5 mins. Add enough organic chicken stock to cover the mix

Simmer for 20-30 mins

Add 1/2 cup coconut milk, (I used the 365 brand in the can)

1/4 tsp curry powder, 1/4 tsp salt or to taste. Blend. Eat. Enjoy
