My recent trip back to my home state of North Carolina inspired this recipe. Growing up in NC, peach cobbler was always a favorite. We used to buy it from this great family owned restaurant. I wanted to make a grain free, sugar free version that I could enjoy without the GUILT, bloat and sugar CRASH that often accompanies such a dessert. ¼ cup sifted coconut flour 3 tablespoons butter, melted 3 eggs 3 teaspoons Xylitol ¼ teaspoon salt ¼ teaspoon vanilla ¼ teaspoon baking powder 1/8 tsp fresh squeezed lemon Method Blend together butter, eggs, honey, salt and vanilla.
